Default Nothin' special WSM ribs (pics)

Never got around to doing them yesterday. So, did em today.


Insane in the membrane removed

Light seasoning of onion and garlic powder and "Cajun spice".

Charcoal ring ~half full of KBB and BIG chunk o' cherry jet-started w/ HF propane torch

Temp ranged from 220-275. Midway through cook, I strapped on my guitar, lost my mind, temp dropped to 205 in the 4th hour. Charcoal was mostly spent, so foiled to retain heat (windchill ~18*), jet-started some lump, pulled off the top and midsections and dumped that in, and let em finish at 270 for another hour. Slopped on a bit of Bulls Eye, and they were done via bend test.


Nice smoke ring. Excellent "chewy" texture, and tasty!
