If you had a cookoff where the whole field was limited to 1 rub and 1 sauce what would you pull out of the hat? Mine would be blues hog original and plowboys yardbird.
 
If it were a KCBS 4 meat, I'd go with Smoking Guns Hot and BH Original

Depending on what meats were involved, I might change the sauce (IBCA I would go with Head Country)
 
SG Hot and Blues Hog Original. We actually just chatted about this last weekend with some BBQ friends, and we learned about the SG mild then too. I would still go with hot and just vary my amount used.
 
I personally enjoy the Smoking Guns Hot, but I would put my money on the general public would prefer the mild over hot!!!

Since when do we cook for the general public?! If we're talking people's choice style, I would 100% change my answer to Cim. Doc and Sweet Baby Ray's; it'll be a good general flavor for spice and a familiar sweet in the sauce.
