Morning all
Started smoking this guy at 4 this morning.
Want to be done at 6:30
Just felt like popping in to say hey and see who else is awake

Ha. Got the weber locked up tight. Don't want to mess w temp by opening it up.

Question - 9 lb butt on for 3.5 hours. Probe says 149*
Cooking at 250*
I'm surprised the temp of the meat is already so high
Am I doing something wrong? Assumed this would take 12+ hours to get to 195*

Usually 1 hour / lb @ 250° ime, so you're doing fine. You'll stall for a couple hours in the 180-190 range, then it will climb again.

Turn your grate to use the grate opening and reload by continuing your snake another few rows. No problem!

At those temps though, you might be pulling it off by 2pm. What is your grate temp, and what is the outdoor temp? Most of the butts I've done on my kettle are right on or just over 1hr/pound averaging 250-275 at the grate for the entire cook, and here with the last few I've stopped wrapping and instead let it get up to 275-300 to power through the stall once I hit 170 IT.
 
Yeah, you'll be fine....if you run low, just do like ramman & Dr. JT are saying.....or another possibility is pop the grate out with the pork, add to the chain & set in a pan of beans....

Nothin' like smokey drip beans & the Weber will recoup temp in 10~15 minutes....not ever a big deal.....

ok - outdoor temp is 65*
The grate per my maverick is 240*
thanks for the suggestions on extending the snake!!
Trying to get this to be a 12+ hour cook
 
Also weirdly probe temp is 165*
No noticeable stall or plateau yet
Gosh - hope it doesn't come down to HOW TO REHEAT SOMETHING THAT IS DONE WAY ahead of time!
 
You can hold it....foil, towel, cooler for a long time....I've accidentally gone 7 hours several times & still above 140f......if you're trying to slow things up on purpose, go ahead & fix up the beans.....that'll take a little time & the recoup will add a bit to the time.....sweet peppers, sweet onions, garlic powder, rinsed canned beans are fine or not rinsed Bush's....a BIG dollop of honey & pork drippn's........you won't be sorry !!!!
