Lot of people been doing beef short ribs here. Figured it was my turn. Hope they turn out good.

Applied some black op's rub.


Put on the pit where hope to maintain around 300.

Looking good, COS.

What sort of wood are you using?
 
Two hours in, had to rotate. One end getting darker than the other.

 
Those bones look good up to now. IMO, don't bother about darckness it will be all black in 4-5 hours more!
 
Sort of flying blind. First time don't have a temp probe in the meat when cooking, besides pork ribs. I did temp it at 2hrs, 140ish. Just going by color and later on tenderness.
 
Some baby backs also, to test the byrons butt rub. Going to have a party here next weekend, with wild boar meat. Wanted to see how the Byron's taste.

Yeah a co-worker in laws gives him some wild boar. He's going to give me some to cook. He's going to bring his family and a few other family's. Going to do a few other things also, with maybe another live cook.
 
Enjoying another frothy beer waiting for the meat to be done.

 
Pulled, probed tender, one spot was sort of hard. Hopefully turns out good.

Niiiiiice... Those are some really nice looking short ribs man. I love myself some cherry wood also.

Looks great! How long did they take at 300? I have a 3 bone plate I'm going to try tomorrow and am not quite sure about time.
