More camp food. These are one of my favorites. I don't know why I never make them at home, only when camping.
Made a "meatloaf" mixture. Beef, onion powder, seasoned salt, minced onions, beef bouillon, ketsup, worst sauce, water, egg, bread crumbs.. I think that was all.
cut some sweet onions in half and scooped out the centers. Left about 3 rings.
diced potatoes for the bottom of the dutch oven and added beef stock..
placed the onions in the pot....then stuffed em with the meat...
sprinkled seasoned bread crumbs on top for "crunch"..
into the tire rim...
added a shovel full of hot coals and let it go....
rotated the pot and lid every 10 minutes or so....the cook took about 35 minutes.
The stuffed onion with tatoes and salad...
these come out moist and tender and I like the added crunch of bread crumbs on top.
A simple dish but they seem to be one of my favorites while camping.
