First, a sheet of non-stick aluminum foil by Reynolds called "release". Put your fillets on there then brush with melted REAL butter. Season as you like. I used Penzey's "chesapeake bay" seasoning on one fillet and their "world of flavor" seasoning on the other two. Get grill really really hot , then lay foil/fillets on grill. only takes couple three or four minutes per side depending on thickness.

That looks good! Don't guess I've ever had walleye, but it sounds like I need to find some to try!

I could do something similar with the Bluefish I have in the freezer.... That sounds good.
