Smoked Chuck on Beer Bread

Neighboring rancher brought over a couple of his fresh butchered Red Angus chuck roasts for me to try. He's convinced his Red Angus tastes better than my Black Angus. :)

I hadn't made a big sandwich in a long time so I gave it a go.

Seasoned the chuck with Big Poppa's Little Louie Garlic Pepper rub and some of Harry Soo's Beef rub.

into the drum with some hickory...

after a couple of hours I added beef stock, onions and garlic, then covered.

made a skillet of beer bread...

I brushed the top with melted butter to help with browning and added a few minced onions.

made a smoky cheese disc.... blended provolone and moz and let them catch some smoke.

pulled the chuck from the heat when it was tender. Let it rest for about 20 minutes...

put the smoky cheese disc in the fridge to chill while getting other stuff ready.

started with a good layer of smoked chuck...

slathered the lid with a horseradish sauce...

It tasted good. Not sure if I will tell my neighbor though. :laugh:

Looks great! I made my first beer bread a couple of days ago,a but it came out kinda brickish. How did you make that?
 
Well I thought about starting a diet today. Maybe tomorrow!!!
