Was at the grocery store and they had a decent one on sale so I went for it.



Used peppered cow on it. Got the kettle running 250.

Pulled at IT temp of 120. While all that was going I got a few ingredients redients ready for a quick pan sauce.
1 shallot minced
1/4 cup water
1 TBS butter
1/4-1/2 Ts of the beef base

Got the grill are ready

Secret.... bacon grease

Seared the steak for 2mins either side in the bacon grease


While the steak was resting I made the pan sauce
Add shallots to grease/beef drippings and cook until soft

Then add the water and beef base and simmer till thick. Remove from heat and add the butter. Makes a very nice addition

Wow Matt that looks really good and the bacon grease is a great idea!
 
Beautifully done, Matt! I'm assuming you'll be entering two TD's at once with this, right? :mrgreen:
