Smoked Chicken and Egg Noodles

Just some comfort food.
Wanted to make a batch of chicken and egg noodles so I started by smoking a hen in the drum...
kept it simple with salt, pepper and lots of butter under the skin..

added some boudin...

fried green tomatoes...

and made drum biscuits...

This was the first night's meal....

Smoked hen, boudin, fried green tomatoes, blackeyed peas and a biscuit...

loved the boudin!

The next day I made egg noodles.. I'm getting a lot of eggs from my hens right now.

I roll out 1/4 of the dough at a time...

wrap the dough around the rolling pin, slide it out and slice the noodles...

shake them out and hang them on the noodle rack to dry for a couple of hours...

break the noodles to the length you want and boil in salted water...

I combined the cooked noodles with the smoked chicken, drippings, stock and seasonings...

That's it...
Smoked chicken and egg noodles. I like mine with mashed tatoes...

Not fancy but it was a warming meal for me.

Thanksgiving-Christmas and New Years we have hen n noodles. The hen is boiled. Not next time. The hen is looking at coals.
Hell Yea- very nice.

Thanks Adams! That's a nice holiday tradition. :thumb: Smoked hen adds an extra layer of flavor. I know it's not healthy eatin' but I save the drippings to add to the pot too. :becky:
Thanks for the weather warning. I think I'm setting pretty good for this one. (might have to retire my cutoffs though. lol )

The grate was made by Matt at Meyer Metal Works in Kansas.
