I need help . a friend of mine came over and gave me a couple of goose breast . I have never smoked goose breast before . any help would be appreciated.
 
Not a big goose fan and I've never had smoked breast. Ive made jerky that was ok, and i've had pastrami that was awesome. Wish I had the recipe because its one i would love to try.
 
I don't think there is enough fat to smoke them, so I've never tried. I always hammer them flat and chicken fry them.
 
I've smoked them a few times. wild goose can be pretty gamey depending on the goose. I've had some that are good and others that are bad.

the ones I have done, I brined over night.

then I rub and smoke them until IT gets to about 160-170.

then feed them to the dog
 
I would bacon weave it and inject it with good homage marinade !!!


I was thinking bacon as well. All wild birds, waterfowl and upland birds seem to benefit from the added fat and flavor. Think I would cook it in a pan as well.
 
Hope he gave you the gizzards too! Fried goose gizzards are great.
 
You can grill hot till med rare--this is what I would recommend.

If you want a smoke flavor, cold smoke for an hour beforehand.

Never had it, but every post that made goose pastrami I've seen was pleased with the result
 
Slice thin to serve and remove steel shot before breaking teeth.
 
Marinate breast chunks in Terioki mix and then make kabobs with veggies. Grill them like cooking a steak. Hands down best way to eat wild geese.

Not sure if it helps but I once had a friend give me a breast goose.
