I'll be picking her up during the week next week and loading her up with 250lbs of meat for Fat Tuesday (Feb 9.) (And some smaller stuff all weekend before)

Very nice, you will have an awesome rig when you are done. Really looking forward to seeing her completed. It want be long now till you pick her up.
 
I can't wait to see it! Design looks cool but the real thing should be amazing.

Not sure. I saw one that had 3 -7" racks. So I knew he could do 4 @5" since it's the same overall height. I'll measure and post when I pick it up next week.
