Santa Maria Tri-Tip that is!
Started with your basic Tri Tip and trimmed it up

Rubbed with Oakridge Santa Maria Rub.

MSD made up some Cheesy Jalapeño scalloped potato dish

Sprinkled with Oakridge Habanero Death Dust

Maria Tip on the GMG at 200° until IT of 105°

Then for a sear on the chimney of KBB and a couple chunks of Cherry topped with the center from our Stok grill. – Temperature HOT!

And the other side – Had to move around a bit to get good coverage but just a couple minutes on each side.

In for a rest – covered in foil for about 30
