From the garden... not Q

Big Al put in some Eggplant this year.
I don't like eggplant, I am sure of it. It's bitter and disgusting.
now we have this huge eggplant, and I have no clue what to do with it.


So I did a little research and here it is plated...



So decided to do some parmesan...
After I salted it and let it sweat for a while and blotted them dry.
Flour, egg, and bread crumbs...
Oven fried - a little oil on cookie sheet @ 425 degrees for ~ 30 minutes.


Then into a pan, with a little sauce, mozzarella, and parmesan... back into the oven for a few minutes...


I was really prepared to hate this... and order pizza... but, but...
I LIKED IT!!!! Crunchy, not bitter...

A vegetable...
I'm scared..
