Wife headed out early with 3 other ladies for a golf tourney 125 miles away. I OWN today. Blueberry smoothie breakfast, guacamole salad for lunch and then--

Fired up the PBC with Royal Oak natural bricks, opened and seasoned two racks of beef ribs with garlic pepper rub from Gander Mtn. Threw two small chunks of pecan on the coals, hung the ribs 2'45" removed and wrapped in HD foil letting them rest one hour.

Beef ribs are my favorite food...right up there with garlic, chocolate and bacon. :)

Finally sharing some love with the PBC? Looks great!

Finally a day in the High Plains where the wind isn't blowing 40+. The way my patio faces (east) and in a horseshoe the wind really whips thru. It's my lightest cooker, so it gets sidelined in "breezy" panhandle winds.
 
I got some beef short ribs for today, those look great, nice crusty bark.

how did you make a stainless knife look like carbon steel?

Last two ribs. Both the wife and dog snarled and growled when I attempted a theft from the brides plate. Like Cowgirl, these are one of my favorite foods. You just need a rack per person to make a meal. The are worth the effort though.
