In need of potato salad and cole slaw recipes

I've tried many, but would like to make my own on a moments notice. Any suggestions?
 
Here is one I like. I measure nothing really and use potatoes, onion, dill pickle, bacon, boiled eggs, mustard, mayo, garlic powder and salt and pepper. If using russet taters, cook until just fork tender as they tend to be mealy or grainy if over done. Goes great with all bbq! :-D

Here's my standby. ...I always get rave reviews on it.

Parmesan-black pepper coleslaw

I medium head of cabbage- 2-2 1/2 lbs (note- for color, I throw in a little red cabbage too...maybe 3 or 4 to 1, green/red)
1 large red bell pepper
1/2 cup white wine vinegar
1/4 cup olive oil
3 tablespoons sugar
2 1/4 teaspoons coarsely ground black pepper
3/4 tsp salt
1 6-8 oz piece of Parmesan cheese
3 tablespoons mayo
3 tablespoons sour cream

Shred cabbage and place in large mixing bowl. Dice red peppers and throw into bowl. In a seperate small bowl, whisk together vinegar, oil, sugar, pepper and salt. Pour over cabbage and peppers and toss to coat well. Marinate in fridge for 30 minutes.
Meanwhile , grate cheese to yield 1 1/2 cups. Whish together mayo and sour cream and add to cabbage mixture along with grated cheese. Mix well to combine. Cover bowl with plastic and refrigerate 4 hrs before serving.

psyco slaw: uses Marzetti's slaws dressing and red cabbage & cracked pepper
carrot & cabbage.
jacked up tater salad: use organic red taters with skins on, sliced up green scalions, pickles, and green olives.. with juice, loads of eggs & Marzetti's w/ miricle whip
toped w/ paprika.... this gets em going

Anyhoo.

10 lbs potatoes
1 doz. eggs
2 cups mayo
1/2 cup onions
1/2 cup celery
1/2 cup bell pepper

Boilpotatoes until tender. blend all other ingredients together. Add Black pepper to taste.
 
Dude, try this. It's my World Famous in my Own Mind potato salad. Always gets raves and requests for recipe. It did again today. So darned simple....


Red boiling potatoes
Ripe red bell pepper
Sweet onion (Vidalia or Texas)
Hellmans Mayo
Grey Poupon Dijon Mustard
Salt and pepper


Halve and boil about 2# red potatoes. Cool. Refrigerate.
When COLD chop to 1/2" dice
Chop one red pepper to same.
Dice half cup sweet onion to 1/4" dice
Put all in bowl and mix.

Then add one cup of Hellmans mayo, two tablespoon GP Dijon mustard, salt and pepper. Mix again, serve immediately.

Remember to tell folks it's your World Famous in your Own Mind Potato Salad

Here is my go to recipe for slaw - never had any complaints.
If you don't feel like fussing, it works well with just the dressing.

Calypso Slaw

Dressing
1 cup Mayo
2 Tablespoons sugar
2 Tablespoons vinegar
4 Tablespoons prepared mustard
½ teaspoon celery seed salt and pepper to taste

4 cups shredded cabbage
12 ounce can Mexicorn (Green Giant Brand)
½ cup chopped onion
½ cup shredded cheese
2 Tablespoons sliced ripe olives
Mix the dressing and let it set to let the flavors mix - day before is great
Dress the slaw just prior to serving - I never use all the dressing -
 
Only slaw made in my home...bring somethig else...it goes bad.

2/3 cup mayonnaise
3 tablespoons apple cider vinegar
3 tablespoon sugar
3 teaspoon celery seeds
2-3 tablespoons milk (to thin and add creaminess)
1 bag prechopped cabbage- your choice (I throw mine in the food processer and make it a bit finer)

whisk ingredients together, pour over cabbage, chill for a minimum 30 minutes before serving.
 
I keep potato salad very simple. I don't measure anything, but here it is...

5 lb. bag red potatoes.
about 8 large eggs
Mayo (enough to coat)
a little bit of yellow mustard
couple of tablespoons each of dill and sweet pickle relish
salt and pepper to taste.
 
try using miracle whip intead of mayo,especially in cole slaw,it doesn't thin out as bad

Cock of The Walk Cole Slaw (with slight adjustments)

1 lb. bag of ready mixed slaw with carrots
1/4 cup green onions chopped
1/4 cup white or vidalia onions, chopped
1/4 cup bell pepper, chopped
1/8 cup sugar
2 tsp black pepper
1 1/2 tsp granulated garlic powder
2 tsp (revised 1 tsp to taste) Lawry's salt or Tony Cachere's creole seasoning
1 TBSp white vinegar
12 oz (revised 8-12 oz to taste) Mayonnaise or Miracle Whip

By far the best cole slaw I've had is from a Friend of ours. She takes cabbage and mayo then adds chopped dates and toasted slivered almonds. It tastes incredible.
 
Made a standard potato salad and had some really good thick sliced ham left over so I cubed it up and tossed it in - Now I have to make it this way for every family gathering because everyone loves it.
