Anything is game as long as it's been cured. It doesn't have to be home cured, so store-bought items that are already cured are just fine.

You may submit entries that are cooked from Friday 3/17/17 through

I homecured the corned-beef, but I don't have any action shots of that. Here, however is the corned-beef on the WSCG being transformed into delicious pastrami

What Luck. I haven't entered a toss-down for a long time and this weekends cook qualifies.
I did a reuben fatty made from ground corned beef, sourkraut and swiss cheese. Smoked on the SS UDS. Thread on main page.

Alrighty.......not what I had in mind when this TD was first announced, but this is how it wound up.

Please accept this as my entry for polling time. All the meats are cured and smoked except the mortadella which had no smoke applied. All were done during the TD time frame.



Clockwise from top left 6 head cheese, mortadella, homemade bread, capicola, 1 head cheese :mrgreen:, swiss cheese, mustard, cotto salami, jowl in the center.
