Reverse Seared Ribeyes and Cajun Grilled Shrimp (Pic heavy)

After putting together the Rec Tec late last night, we had to test it out tonight! Got two 2" ribeye and 1/2 lb. of fresh large shrimp. Liberally coated the steaks with Obie Cue's Steakmaker and let them come to room temp while getting the Rec Tec going. Set the Rec Tec at 250 and put steaks on til they reached 126 degrees internal. Sprinkled the shrimp with Tony Cacheres and skewered. While the steaks slow smoked started a chimney of KBB. Got the Performer going and up to almost 500 degrees. Moved the steaks to the Weber for a good sear on both sides then pulled to rest and cooked the shrimp over the hot coals. Pulled and plated with a nice baked potato and some baked sweet onions. Oh, and couldn't forget the Tiger Sauce!! Turned out awesome! Rec Tec did an awesome job as did the Weber!! The wife loved it and said thats how she wants all her steaks from now on!! If mama's happy, I am happy!!!!!

Lighting in our kitchen is kind of dark for the pics. The steaks actually ended up more medium, a little more done than we like. We usually like medium rare. Should have pulled from smoker at 120 but didn't catch it as I got busy around the house!! They were still great though!

I like mine between rare and med rare. If I have a couple too many IPA's I have been known to overcook mine as well but even at that temp a good steak is still good. If someone else buys and cooks my steak I will still love it even if well done. :becky:
 
Congrats on the new pellet pooper. Nice color on the sear. Plate looks like it tasted great.
