Appetisers and sides

I recently upgraded (in size at least) from a UDS to a large pellet smoker. I found I have a lot of extra space to fill up. My go to appetisers are jalapeno poppers, fatties, "baked" potatoes and stuffed mushrooms. But I'm looking for other ideas. (And yes I know I can always throw another tank of ribs on)

What do y'all throw on the smoker to take up the extra space?
 
BTW here is my mushroom recipe

Ingredients

1/2 cup Italian-style dried bread crumbs
1/2 cup grated Parmesan
2 garlic cloves, peeled and minced
2 tablespoons chopped fresh Italian parsley leaves
1 teaspoon basil
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
28 large (2 1/2-inch-diameter) white mushrooms, stemmed

Mix dry ingredients and 2 T olive oil in bowl, stuff mushrooms

Sprinkle remaining oil on pan, place stuffed mushrooms on pan.


I smoked at for about 35 minutes (obviously depends on temp)

Took about 15 minutes to prepare. I used a spoon to remove mushroom stems.
 
Fresh broccoli tossed in olive oil and dusted with a rub, in an open foil pan is tasty. Much tastier than it sounds...
 
Granny smith apple wedges wrapped in bacon, liberaly coated in brown sugar. Cook hot until bacon is crisp and apple soft. Make extra, they go quick.

These are awesome! I have only ever grilled them...

Chicken wings
Pan of beans
Moinkballs


And sliders are also great if you want something slightly more substantial. Pulled pork, buffalo chicken, etc.
