+1 on Gus' Fried Chicken. We stopped in there a few years ago and were very satisfied.
It was featured on the Memphis episode of "Man Vs. Food" with Adam Richman (not as the challenge, but just one of the cool places to eat in town).

Although I prefer Uncle Lou's (http://unclelousfriedchicken.com/), but don't go to Uncle Lou's after dark.
Edit: Uncle Lou's isn't downtown, so scratch that.
I would add the Majestic Grille (http://majesticgrille.com/)
Also, if you get out of downtown into mid-town, I can't recommend Boscos (http://www.boscosbeer.com/) highly enough. Especially if you are beer fan.
