Hello, I'm a new, first year team of one. I have 2 comps, so I have a little experience. I'm looking to see how if I can improve on my techniques. And do something to get my brisket out of the bottom (DAL at the last comp).
Preferably a low and slow team, instead of ICP.
It seems the closest comps coming up are:
- 34th Annual Kennett Jaycee Show-Me State BBQ Cookout in Kennett, MO on May 24th
- Smokin on the Lake in Monroe City, MO on May 30th
I'm good with directions and would be willing to scrape chicken fat or fetch beers or do dishes. Whatever it takes.
