Smoking a Brisket for the Laser Cutting Crew

I was going to do some Ribs for the guy at the laser shop that I use but when I got to Costco they had Angus Prime Briskets for $2.69lb so for the same price ribs I will be surprising them with some salt and pepper brisket for lunch.

Started the cook at 10:00 pm will cook at around 265-275 for 12 hours rest for 2 hours.

This our little Camping rig we will be cooking on tonight it has a KAT 42x20 Reverse Flow Smoker (Built before we started KAT), Santa Maria Grill, 2 Burners and will be putting a Griddle next to the smoker to complete the Camper Cooker Special.

Nice looking brisket! I like the "little camp smoker" too. I really like the way you have the Dots mounted...
