Brisket Cook (Lots of Pics)

A few pics of a 17 Pound Brisket I cooked on my Lang 60.
I went simple with a Salt, Pepper, and granulated Garlic Rub.
I cooked it at 275 Degrees, wrapped in Butcher Paper and took
it off the cooker when prob tender. The family loved it.

I can't wait to cook another one.

Nice trimming work. Im jealous of the guys that have a knack (and the good knife) for that side of the job.
 
Looks fantastic! Every time I cook a packer, I look at the pile of trimmings and shed a tear:cry: I live well out in the country, so put the trimmings near the trash burn barrel and the local Possums have a feast. Even have a Coyote or two brave enough to sneak in for a bite.
I often put a trail camera out just to see what shows up
 
That does look great. Not trying to sidetrack your thread but in the Lang how far the the cooking grate from the plate? It looks a lot closer than I thought it would be.
 
The grates are a few inches away from the deflector plate. I can measure the distance if you want.

No that's alright. I have a home made and was thinking about lowering the grate to fit taller things now I know it's not a problem.
