chicken skewers

hello. i got a catering request for 75 people. they want pulled pork, cream corn and chicken teriyaki sticks like they serve at the fair. i have no issue coming up with quote for corn and pork, but have no idea on the chicken. Any one have any advice. thanks.

You can get 40# of chicken breast for under $2/#. I would slice those into long pieces and then marinate them in the teriyaki sauce and then grill as needed.

Charge a bit more than you usually would because of the extra labor involved, tack on another .50-.75 or something.
