I really like Ron's tool.

But with time to spare as the meat rest in the cambro, I just put the pan in the freezer for a couple minutes and scrape the solidified fat off.
 
My wife got one of those fancy ones like RonL but it started leaking after a short while....put it in a bowl in the freezer and skim off the fat. I've had some bowls for 30 years and they don't leak.
 
If you have the time hockey puck method (freezing) is probably the best. You can re-use the fat for other dishes. I do both depending on time.
 
Save the fat from brisket and make gravy with that. It will knock your socks off. Use the drippings too.

I like the bottom drain over the side spout for the speed. Remember that 90 of my briskets and butts are done at competitions so getting things done fast and efficiently are important.
