On the Egg indirect @ 225* For a 2 hr. Smoke with Apple wood





After the 2 hrs. I brought the BGE up to 350* until a 148 interior



Rested for 20 min. and sliced

Thai Chopped Kale and Avocado Salad



Served with Thai Chopped Kale Avocado Salad. The Lamb was wonderful and so was the salad next time I'll chop the onions smaller

Have been meaning to do a lamb fatty since last year but maybe I'll do a loaf instead

nice work! I've got some ground lamb thawed for tonight...unfortunately I don't have enough for a meatloaf :doh:
 
Ross, looks amazing!!! Where do you put the Guru pit probe? I dont see it in the pic, just the wire?
 
Definitely oh la la la,

But gotta say I'm a little old school, I much prefer to clook my food relying on touch, feel, smell n taste rather than sticking a probe in it! To measure a temperature

That looks great,,I have only ever used a blend to make Lamb loaf
