Beef Ribs, Smoky O Rings & Tatoes

Just some finger food...

Picked up some beef ribs at the butcher. Seasoned with Dink's Beef rub, then into the drum at 275F.

decided to add a colander of sliced onions and a few tatoes to catch some smoke. I've made these before... just want to give the onions a hit of smoke without cooking them all the way.

bagged the smoked onions and kept them in the fridge until I was ready for them.

made some beer batter..

dipped the onions in flour before battering and frying..

pulled the tatoes off the heat while they were still a bit firm.
Sliced and gave them the same batter treatment...

pulled the ribs off the heat when they had the pull back I was looking for..

the "smied" potatoes (smoky-fried) sprinkled with Tatonka Dust.

Loved the Dink's rub. I've used it before, it's becoming one of my favorites. The Tatonka Dust on the smied tatoes really hit the mark. Will use that again for sure.

Best of all...there weren't many dishes to wash. :)

I think the beer batter recipe is on your blog, yes? I fried up those awesome pickled green beans of yours awhile back in the beer batter and they were fantastic - in fact, my wife might be open to the idea of polygamy after that. :shocked:

I love beef ribs and I got it real bad for onion rings and fried taters. Dang girl! Very nice work yet again Jeanie!

lol Greg thank you!! I'm glad you and your Mrs enjoyed the beer battered pickled beans. They are one of my favorites. The twangier the better. lol

I found the beer batter recipe....


1 cup flour
1 tsp salt
1 tsp baking powder
enough beer to make pancake like batter (about 3/4 of a 12 oz bottle)
or more if you like a light batter

I use light beer. Dark beer changes the flavor, makes the batter too strong to taste the smoke.
