Been a while since I've done some good tacos. With some downtime finally and the Taco TD going down I got work. I made some al pastor and carne asada tacos from scratch. A lot of work that I can write an article on but I'll try to make it as short and sweet as possible. :biggrin1:
First up al pastor:
One of the ingredients in the al pastor marinade is achiote paste (annatto seed paste). You can buy it off the counter but it doesn't even compare to how it's supposed to me done. So of course I made the paste from scratch.
Here are the ingredients for the achiote paste
Into the blender and this is what I or you should end up with
Then the rest of the ingredients
Dry peppers soaked
Into the food processor with the achiote paste
This is the marinade to put your pork in overnight
Bone in pork shoulder (you can do boneless if you choose to)
Sliced and tenderized
Fresh pineapple cored
Diced
Everything into the marinade. Into the fridge overnight
Now the ingredients for the carne asada
Nice thick piece of flap meat
That I shaved thin
Going into the marinade overnight as well
Time for the salsas
Made some red salsa first (Salsa Roja)
I really like this one also which is a avocado salsa. Insanely good!!
Of course pico de gallo
Next day
I fired up the PBC and hung the racked, marinated pork slices with a pineapple ring in between each slice
About two hours later this is what she looked like :biggrin1:
By this time the BS griddle was going so I shaved off some right onto the griddle to caramelize for some amazing tacos
Had the carne asada going as well
Warmed up some corn tortillas
And plated BAAAM!! Un-farkin-beliavably gooooooooooooood!!
Then of course my bro shows up with some home made chorizo a friend of his got for him so we throw that on
Holy Cow!!! :shocked:
After some....wait... a lot of beers
My bro, buddy and I decided to make a MEGA Burrito with Pork, Beef and Chorizo :becky:
Of course delicious and especially after all the beers. :becky: Really, it was amazing.
