Tacos--Mega pron so bare with me

Been a while since I've done some good tacos. With some downtime finally and the Taco TD going down I got work. I made some al pastor and carne asada tacos from scratch. A lot of work that I can write an article on but I'll try to make it as short and sweet as possible. :biggrin1:



First up al pastor:

One of the ingredients in the al pastor marinade is achiote paste (annatto seed paste). You can buy it off the counter but it doesn't even compare to how it's supposed to me done. So of course I made the paste from scratch.

Here are the ingredients for the achiote paste

Next day

I fired up the PBC and hung the racked, marinated pork slices with a pineapple ring in between each slice

By this time the BS griddle was going so I shaved off some right onto the griddle to caramelize for some amazing tacos

You are doing tacos right my friend. Growing up in Cali that's what they used to serve right off the taco truck. Still trying to find a decent taco in the Midwest.
