The Payoff... 1st brisket.

Nice looking bark. From the pull I see in a few slices looks like you nailed tenderness
 
This may sound sacrelig to a lot of people but my favorite brisket leftover is to let the uneaten, uncut portion sit in the fridge overnight, and then deli slice it with my meat slicer. It is like smoked prosciutto and absolutely amazing. Throw in a slice of cheddar, a few banana peppers and horseradish mustard and you'll have the world's best sammy.

I don't see a thing wrong with that plan. I may have to invest in a deli slicer.
