adding burgers and dogs?

hello everyone, i am quoting a job, with ribs,pulled chicken burgers dogs 2 hot 2 cold sides for 125.

i have a handle on the ribs and chicken, but how many burgers and dogs to make?

cant see doing 125 of each...

any thoughts?

I have done this once and we prepared 1/2 each and and had unopened dogs ready if needed. Charged for all. That being said more dogs wee eaten but still we threw some out at the end of day. Just be prepared. Better to have too much than not enough.

Charge it as a 4 meat combo. Have 125 of each on hand and cook what is needed.

How is that going to work? Ribs and chicken take some time to cook. He can't just cook more if he needs more.

You cook the ribs and chicken as a normal cook they will move. You keep the hot dogs and burgers chilled and cryo'd, only open as you need them. It is unlikely that you will move more than 15 to 20 of them, but, you have to have them available.
