Oct 20, 2016 #13 I like milder woods as it is a longer cook time with beef ribs. I avoid mesquite and like Oak, Pecan, Hickory and most of the fruitwoods. Cherry can get the meat pretty dark (especially pork ribs) so mix with something else.
