It's been raining a lot, we usually eat late & it gets dark early - makes cooks & documenting cooks difficult.
Last night was no exception.

The solution = ReHeatos: some chile rellenos topped with home made Hatch enchilada sauce, gently warmed carne arrachera & jalapeno buttermilk cornbread.

Biggest concern with this batch of ReHeatos... have almost depleted my Hatch ench sauce stash.
