Can't get away from tacos

I think it's just me, but my beautiful wife is on board. Leftover chicken spin from the weekend. Cilantro, chili sauce and the Hatch extra hot on top.

No, I had two. The beautiful half insisted on the extra for her salad topping tomorrow. I don't know if it's regional or just me, but this type of food is central in my mind. Especially for left over BBQ.
 
Its missing lettuce , tomato, minced onion, and sour cream. But other then that, it looks good.

I do like a little lettuce, tomato and sweet onion. I've never been a fan of sour cream. These little tacos lose room quickly in my opinion so I like to let the meat and heat shine.
 
Looks delicious. Have to admit I'm into the Maker's and upon first reading I'm thinking, "hmm, how in the heck do you cook chicken spine?" And "is it crunchy?".

And I agree with a previous poster who wrote you better have had more than one of those! Nicely done.

Are the United stores still roasting the Hatch chiles outside the front doors?

They did last weekend. I'm pretty sure they are this weekend too. It's supposed to be every weekend during August. I'll let you know. :becky:

Too far to drive, though we're planning on being back in town for Thanksgiving.
