For Labor Day i cooked up a prime brisket from Costco. WSM 18 inch at 250 for 11 hour cook with just salt and pepper. Probed nice at 193. Rested for an hour in foil. Other than the fact I cannot get a smoke ring with my WSM this thing was close to perfect. I hope everyone else had a successful labor day cook.
