fired up last night at 9pm set up with snake method with water pan in center of the ring. used kbb 2 briquettes wide and 3-4 high around topped with some oak. came up to temp 250 average by 10pm put a brisket on went to sleep with the maverick alarms set 225 low and 260 max. slept the night thru pulled brisket at 12pm resting since. still burning at 2pm cranked open the vents got to 350 threw some corn on pulled at 3:30p. open vents all the way now 4pm and sitting at 367. all i can say is wow!!
 
They will even hold the heat for many hours even after the coals are gone.
