I might as well be the first to jump in with my weekend meatloaf! Onions, bell pepper 3 lbs of 80% ground meat ( I usually do 2 lbs of ground meat and 1 lb of ground pork, but no pork there this time), 2 eggs, 1 cup of bread crumbs, 1/2 cup of milk, whatever Worchestershire looks good, sea salt, ground pepper, Magic Dust and Captain Rodney's Whiskey rub this time. In the fridge overnight to set up and out the next morning for the bacon draping, a little more Magic Dust then on Big Joe at 350 or so until and IT of 160. Meatloaf, potatoes and red gravy! A nice comfort food!

This is an entry...

Who doesn't love a good burger? And this one was great!

Chicken and Spinach Burgers with Provolone, Grilled Yellow and Red Bell Peppers, Tzatzkiki Sauce and a Sunny Side Up Egg

And some pickles... :becky:

The burgers are ground chicken with spinach that was sautéed with garlic and some lemon juice, and lemon zest, salt and pepper. I form the patties and then let them firm up in the fridge for a while since the mixture is wet. The Tzatziki is greek yogurt, garlic, a little white vinegar and some grated cucumber.

This is also an entry :-D

It was a chilly weekend in the area, so chili sounded good, so I made some.

I started out with two pounds of ground beef. I seasoned them with Williams Fajita Seasoning on put them on the grill...

While the beef was cooking I got my mise en place ready (that's cheffy talk for prepping the ingredients :-D)

The seasoning is two types of chili powder, paprika, mexican oregano, cumin, salt and a cayenne pepper. I added half of the seasoning at the beginning of the cook, 1/4 after two hours and the rest after another two hours. I put the cayenne pepper in at the beginning and too it out after four hours.

Once the beef was cooked most of the way (I took it off at medium to let it finish cooking in the chili) I crumbled it...

And then added everything into the crock pot.

8 hours later it was time to eat! The house smelled fantastic all day!
