Here’s the chicky practice I talked about... I doubt this will get any better, if you miss yer mouth a lil bit or you can't bite through the skin for any reason, I'm bettin they will be making a second attempt. This skin is awesome as is the meat - kinda hard to choose which is best!

Do you find leaving the bone-in keeps the meat a bit more moist?

did you do any thing to the skin?

I did a batch of thighs yesterday, I did skin surgery to some and the rest just trimed them the usual way. the ones I scraped definatly had bite througe skin but its alot of work. Some of the others had bite through skin some didn't.
