I just joined the La Caja China Club! Still waiting on my smoke pistol with apple turds (pellets):shock: Should be here tomorrow! Cooking a 45lb. pig Saturday for a wedding of 65 ppl along with smoked salmon, corn on the cob, roasted red potato wedges with rosemary and olive oil, spring mix salad with feta cheese, cranberries, and candied pecan pieces. Also, they are having corn muffins, several shrimp platters (cold) with homemade cocktail sauce and coffee service. I should have some great pics of this event, stay tuned!
