Been meaning to do this again and accidentally thawed some quarters instead of a spatchcocked bird I had in the freezer . So gave me a good excuse!

I marinaded the quarters in oil, lemon juice, oregano, thyme, chilis, garlic overnight. Then I wiped them done some and added some rub I had made back when I did this before. Threw them on the weber roti with a smoke pouch for about 40ish minutes and sauced them with nandos peri peri during the cook. Pulled when they hit 175. Served some coleslaw and white rice. Man this stuff is good.

Dunno about all the gasser hate but it turns out some great food when you want convenience. And the smoke pouches offer up a nice smoke profile.

All ready for the spin.

Makes me want to take another trip to London. My wife and I were comically exited when we ran across Nadia sauce at our last cal publix. Unfortunately they just clearanced it out. Stocked up before it was all gone. Guess we will have to order it online when we get low. Good stuff. I also love the extra hot on almonds. Coat them down then pop them in the oven until dry. Yum
