I lost my Spice

So today I tried to cook beef ribs. I looked up on this sight 6-7 hours with salt peeper and garlic.

I did 6 hours @ 250 and the meat was perfect. But none of the spice survived the cook.

I have had this happen before the bark kills the spice. Is that true?
 
How did you prep the ribs before putting on the rub?
