Brine for smoking salmon

Hello Farkers... I hate being a royal pain in your arses but. Bout a month ago found a brine for chinook salmon.. It was a quart of water,brown sugar,lime juice, soy sauce and honey... I just came home w/more salmon and cant find the recipe anywhere. I wrote it down but somehow lost it. Ive been on all the Q-forums and sites and cant find the recipe anywhere.
Does anybody have a recipe that would come close to the original brine recipe. God I sure hate getting older.
Any and all help would be appreciated.

Here's one that has some of the stuff you listed:

Honey Smoked Salmon
Brine:
¾ cup honey
10 allspice berries
2 bay leafs
½ cup sea salt
4 oz rum
15 peppercorns
10 cloves
¼ cup lime juice
1 quart water
6oz ALDER chips (do not use Cedar)
1 large salmon fillet (about 2lbs)


Marinate fillet in brine for 3 hours. Pat dry and air dry for ½ hour. Smoke as the directions of your smoker, but use the highest grill and temperature should be about 160. It will take about 1 ½ hours. Serve warm for greatest flavor, but chilled also works well.

Who knew you were supposed to brinde salmon before you smoke it?
 
bbqbull, I just smoked about 20 pieces of Salmon for a buddy of mine, I use the following brine for it;
2gallons water
1 cup Kosher salt
1 cup brown sugar
1 cup sugar in the raw
1 cup maple syrup
1tbs garlic
1tbs onion powder
Brined between 6-8hours, rinse and dried salmon, then placed a rub on it and placed it in the smoker. My friend has been salmon fishing for 10 years, has eaten smoked salmon about the same amount of time and said this was the best damn salmon he has ever tasted. I used a mix of oak and sugar maple for wood while smoking. Figure this was my first time smoking salmon. Did so well with it I know have about 15 pieces of halibut to smoke for him next. Let me know if you would like the salmon rub receipe I used, dont have it with me now or I would include it as well.

Try this one: Dry salmon thoroughly. Shred, roll in zig....

Agreed. And same goes for salmon for that matter.... Ever tried salmon grilled on a cedar plank!?! I dig smoked salmon and all, but cedar plank salmon on the grill is un-farking-believable! Add this lime zest concotion my old lady whips up..... I need a sammich.
 
Now that's what I'm talking about! Dad's got of of those Sams Club charcoal grills that is like 60" wide and at parties we augment the brisket, pulled pork, and ribs with a 5 foot cedar board full of salmon filets. Usually get about 3-4 big filets on there and serving it is awesome - 2 guys carrying in this huge board and laying it in the middle of the table. Need another sammich.......

Holy smokes! (no pun intended) An entire gallery of porn!!!!! Far, far too much for 1 man to take on an empty stomach. Better call the wife and tell her to be prepared for some beer can chicken tonight. I need a fix!

BTW... How did the smoked halibut turn out? What'd you do to keep it from drying out? With the low fat content in white fish, I would be afraid of making fish jerkey.
 
jsmoker...gosh, I don't remember! I may have brined it. Didn't take too long to smoke either, maybe an hour. It was damn good!

Why , funny you should mention salmon! Here is a beauty I got on Lake Ontario last Saturday! King (Chinook). Took it just north of Niagara Falls 10 miles from the mouth of the river. These things are delicious! Don't waste smoke or brine on the wild ones! Woody
