Maple brine cure, injected 15% weight since it is a picnic shoulder. Going to smoke this guy Wednesday. Bourbon maple syrup glaze I am thinking. I would love to spice this thing up a bit..... but the wife critter's family is driving across states to get here. Need to cater to their liking this time around. Heat doesn't agree with them much.

 
Use some of the "warm" spices like nutmeg, allspice, cloves, cinnamon, etc.
That will spice it up without adding pepper heat.
