so I had some leftovers from the lamb leg I did the other day

and since it was a bit chilly today, I figured a shepherd's pie was in order. Started off by sauteing some leeks, carrots and celery in some rendered lamb fat (seasoned with some salt and pepper)

put the boy to work stirring :becky:, and tossed in some shrooms

followed by some cubed leftover lamb, and let that get happy for a few mins, then added in a few cups of french onion soup, and some arrowroot to thicken.

let it come up to a boil, then topped with the leftover mashed celeriac potatoes from the leg cook

parked it in the oven for a bit at around 450° or so until it looked like this

it definitely hit the spot on a cold day

I've got some leftover lamb in the freezer. This is great idea.

If you have them, parsnips are great. and some shelled green peas mixed in right before the taters go on top are excellent as well.
 
That looks good! Did you consider throwing it on the smoker and cranking the heat up as high as possible? I'm thinking that would be really tasty!
