That should cut it, depending on your audience. You are looking at 5.33 oz per.
 
8 pound bone in is more like serving 8. better get two or three
 
I was thinking either 3 or 4 - 8# breast ,bone-in I think would yield 6# of meat.

3 breast = 18# / 24 would be .75# per person. Is 3/4 # per person ok?
 
Most folks figure 1/4 pound of meat per person if you are serving sides, etc. I use 1/3 pound just to be safe.
