Hot and fast brisket flat?

I can't answer because I'm a Low and Slow guy, but maybe by bumping this back to the top someone else may see it and answer it???
 
Yep. I used to do them all the time. Now I just buy smaller packers. Bludawg's method works on flats too.
 
I smoked a 7lb flat last month in 5.5 hrs and it came out great.
I did inject it and foiled in a pan with injection mix at 160 till it hit 198 then rested.
We ate it a few days later and it was fantastic.
Smoked at 280-290 for till it hit 160 then when foiled I turned it up to 300.
