I cooked a 7.38 lb SRF boneless Wagu Prime Rib
Trimmed some fat and put in fridge on a rack uncovered for about 22 hrs
Took out of fridge and brushed with EVOO and seasoned with 1 T each of kosher salt, fresh cracked pepper, and Montreal Steak Seasoning. Put on my Egg 15 minutes out of fridge @ 220. Used lump and some pecan. Cooked for just under 3 hrs. Took it off at 119 wrapped in foil and put in cooler for 35 min
Made a chimichuri sauce
Seared at around 600 for about 4 min
Sliced as soon as sear was done
Plated
My 5 almost 6 yo Grandson sponteously said Granpa this is awesome. My son said it was one of the top three steaks he has had and my wife who does not like prime rib said it was excellent.
