Ham and Smoked Gouda stuffed Chicken Breasts

This is my very humble entry for the "Meat on Meat" Throwdown that is currently going on.

I decided to use my stainless drum (Eleanor) with cherry and a little bit of apple.



Just a few ingredients: 1 chicken breast, some ham, and some smoked gouda that I had previously cold smoked (On a side note, gouda is my favorite smoked cheese. So so good!).



Chopped up the ham and cheese



Cut the center of the chicken breast and stuffed that sucker full





And threw the chicken on the smoker at about 275



While the chicken was smoking, I grated some of the leftover gouda.



After about an hour or so, The chicken was almost ready so I put the grated gouda on top and let it melt, then I pulled the chicken.



The cherry gives this such a dark color! Looks weird I know but it tasted fantastic.

That sounds and looks really fantastic - what a great combo - and I'm totally with you on smoked Gouda. Very nicely done sir!
