Pork Shoulder and the fat bits

OK, So I made pork shoulder last night and sorted the fat bits out when I was pulling it. I chopped the fat up into tiny little chunks and put them in a baggie in the fridge. I put some of the leftover juice in with the meat and the rest in a baggie in the fridge.

I plan to take the fat off of the juice and use that in the sauce, if it needs it, and to moisten the meat, if it needs it, tonight at the party.

The question is: Do I add the fat bits back into the pork?

What do you do?


Bits of hot, juicy, cooked pork fat with rub on it is not hard to clean up, I found....it jumps right into the human disposal opening kind of all by itself!
 
I wouldn't add the fat back in...but that's just me. Pork shoulder has enough fat in the lean...

Toss the fat (or season a pit with it) and add the juices back to the pulled pork.

Toss it unless you're following the Paula Deen recipe. In that case, use it and add a stick of butter for artery clogging goodness.:biggrin:
