Bacon Wrapped Salmon Filets With Grilled Romaine

Saw an interesting recipe for Bacon Wrapped Salmon Filets and gave it a try. There's a Meat on Meat TD going on. Might enter this if unless I think of something better.

Sliced the salmon into equal sized slices and seasoned it with Pepper, Slap Ya Mama, and Sriracha Salt.

Wrapped two slices in bacon...

Seasoned some Romaine with some olive oil and Slap Ya Mama, grilled it and put on a little fresh Parmesan when I flipped it. (Thanks Peeps for the idea!)

Sliced some cherry tomatoes in have and sprinkled them with the Sriracha Salt.

Wife's plate looked pretty. All in all it was pretty good. The salmon was cooked right, the romaine was slightly sweet, and the tomatoes a little spicy / salty.

Personally, I'd have to pre-cook the bacon a little because I like salmon more to the medium-rare side

Grilled romaine sounds crazy, but even my kids like it.

Actually, it was good. Added a little salt and texture to the salmon.

Sriracha Salt. Saw the recipe here last night. Salty (of course) with a hint of Sriracha heat.

I did precook the bacon. It ended up crisp.

Yeah, saw the recipe here last night (linked). It's half a cup of Kosher salt and five teaspoons of Sriracha. Mix together and and spread on a cookie sheet. Set oven for 200*, put cookie sheet in, turn off oven, go to bed. Next day, break up. The right up was good:
