Good morning brethren. I'm trying Todd's Butcher Block injection with Funk's brisket rub (George Clinton, Larry Graham, & Granulated Prince :twisted:). Here we go...

Well it's about time you got that briskie going. Enjoy your cook and we eagerly await the results.
 
I've got a brisky going right now and trying Butcher BBQ brisket injection for the first time. If it works as well as their pork injection I'll be a happy camper!
 
One thing I noticed about the Butcher Block is that it gels real quick. I used 1/4 of the recipe (with cold water) for the 5lb flat and it started to gel while I was whisking.
 
Hey JD where did you get that Double Needle Injector, looks kinda interesting do you like it ?
 
JD, that bigger needle looks like the one to use, I have only one size and is a pain to get thicker juice through it, what brand is that ? Thinking of getting a pump unit, have to search this site, hope youre Brisky comes out perfect ! did you use a good select or choice ?
 
Still waiting.... no pics, didn't happen.

The injector looks like it has two sizes of needles... a larger one for lumpier (is that a word) or the smaller one for liquid..... just my thoughts on that...

OK, still waiting some more.... what time do we eat?

It went on at 12:30...I just flipped it to fat cap up 10 minutes ago...:lol::lol::lol: It'll be done...when it's done! :twisted:

That's the one I used...easy peasy!:p It's a choice from Costco.

BGE dome temp is rock steady at 250...grate is 230...beer is 38...:biggrin:

I have one just like it and love it. I use the small needle on mine with the Butcher injection.

Pulled at 195...coolered for 1 hour in foil and towel...

All in all...this was my best brisket to date. It was very juicy, the flavor was amazing (my wife even liked it), and it was fork tender (to cut). I was a little disappointed in the smoke ring (wasn't one)...but not sure if that was from the Butcher Block marinade, Oak Barrel chunks, or too low-n-slow initially (220 degrees). There seemed to be an aftertaste that hung around for a while (not a bad one though)...possibly from a little too much garlic powder (Prince).

I would definitely use it again for comps...but will try all-natural for home. I really want to get backyard brisky's down to a science! :p Thanks for the sample Todd...sorry it took so long for the smoke! :icon_blush:

Looks good, just a thought but maybe leaving fat cap down would help your ring.
