Aussie Waygu Brisket Cook

Had a few mates over this evening for Q.

Fuel :- Wood - Ironbark
BBQ :- Silver Creek reverse flow offset / Stoker - Rocks
Meat :- 6kg Wagyu brisket, pork ribs, cup cake chicken

Excellent cook, everything looks awesome!! How long on the brisket and at what temp? I understand they have a shorter cook time and I have ordered one. Thanks for posting!

Cook took 17 hours @ 225 ish. Marbling wasn't a high grade (6 of 10)

I will be interested in what you think of the Wagyu.
It did little for me, almost too rich.
The Oxen from Cape Grim was wonderful.
